ConditionsYou are approved to open beyond the soft opening window of 11:30 to 2:00 and 5:00 to 8:00.
That approval holds as long as every one of the following is true, every day you are open. These are conditions, not suggestions.
- 1Dining room set for online and walk-in at all times. Not just at open. At all times. Clean, mopped, windows and doors smudge free.
- 2Nothing on the dining floor that belongs in storage. No boxes, no product, no clutter.
- 3Music on. Lights on.
- 4Restrooms set.
- 5Front area set. High chairs available.
- 6All drinks available.
- 7Every employee clocks in and takes orders on Toast under their own ID. No shared IDs. No group IDs. Shared logins wreck our labor data and create wage and hour exposure we are not taking on.
- 8Keep practicing. Keep role playing. Every shift. Kitchen and Front. This is the time to work on speed, consistency and brand standards. Weigh each burrito coming out. Make the perfect one. Line them up against each other, show kitchen what consistency looks like. Practice every single food item, again, again and then again.
- 9Nightly update from the kitchen manager and the GM. Non-negotiable. No reminders on this.
- 10Pictures with every update.
- 11Corporate gets camera access. Please get that set up this AM.
- 12Tables not wobbly. All chairs securely built. No loose chairs.
If these slip, we go back to the soft opening window until they are fixed.

- 1.Sundays closed throughout training and soft-opening period. Birmingham ran 7 consecutive days; Smyrna is Mon-Sat only.
- 2.Bar compressed to 3 working days (Mon-Wed) with Daniel. Birmingham stretched bar training across the full week.
- 3.Training start gated by (1) Chef Prasad completing 10 straight working days in Birmingham and (2) verified Smyrna staffing: 15 FOH covering AM/PM/MID/weekends, 12 line, 2 prep, 2 dish.
- 4.Corporate trainers depart Sunday Jul 26 (store closed). Practice dry-run + community drops begin Monday Jul 27.
Week 5 - Final Soft Opens + Grand Opening
Aug 19 - 223/4 doneFinal invite-only soft opens Wed Aug 19 through Fri Aug 21, with influencer and VIP nights on Thu Aug 20 and Fri Aug 21. Any influencer who cannot attend Aug 20-21 should be hosted after Grand Opening. Mitesh + Daniel arrive Thu Aug 20 and stay through Aug 24. Chef Bikram on-site Aug 20 - Aug 25. Akash on-site Aug 20 - Aug 25. Grand Opening Saturday Aug 22 is led by Squeaky Wheel (local team); corporate support is on-site alongside them.
